Grilled Lemon-Garlic Salmon with Asparagus

Ingredients:

  • 4 salmon fillets (about 6 ounces each)
  • 1 bunch of asparagus, ends trimmed
  • 2 lemons, one sliced and one juiced
  • 4 garlic cloves, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Fresh dill or parsley for garnish (optional)

Instructions:

  1. Preheat Grill: Preheat your grill to medium-high heat.
  2. Prepare the Salmon: In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper. Place the salmon fillets in a dish and pour the marinade over them. Let them marinate for about 15-20 minutes.
  3. Prepare Asparagus: Toss the asparagus in a bit of olive oil, salt, and pepper.
  4. Grill the Salmon and Asparagus: Place the salmon and asparagus on the grill. Grill the salmon for about 4-5 minutes on each side or until it flakes easily with a fork. Grill the asparagus for about 3-4 minutes, turning occasionally until tender-crisp.
  5. Serve: Serve the grilled salmon and asparagus with lemon slices and garnish with fresh dill or parsley if desired.
